Morton, I never knew this but you are the perfect man.  What a cook! And yes I always use your salt. One thing I enjoyed for years on the coast was Smoked Oysters. Come football season we would take a large cooler to the docks and buy a couple of bushels of oysters right off the boats. Then we would set cooler outside by the grill, fill it with ice and start the grill. When the coals get white, place oysters on grill top, cover with a wet burlap sack (empty sack first).  This is the secret  - a wet burlap sack. Not dish rags, towels or burlap cloth, but a real burlap sack.  Yes, these are hard to find.  Some families even pass these things down.  Never leave them outside because even your own neighbors will 'borrow' them. Cook until oysters open their shell a little. About 5-10 min--shorter or longer depending how hot your fire is. Great with boiled corn, potatoes and beer, lots of beer. Throw shells in drive way to repave your drive.  After a few years you have a great drive way.  Now you know why so many coastal homes have shell paved drive ways. Keep the oysters iced and the fire going and you  can start on Thursday and go through Sunday afternoon with this.  Sort of a traveling meal.  When you start to get hungry you can go throw some oysters on  the grill.  If you get tired of cooked oysters you can eat them raw if you know how to shell them;  most people don't.  The good thing about Smoked Oysters is that you do not have to open the shell.  It opens when it is cooked. Hint:  Throw out any oysters that have their shells open and do not close when you aggravate them.  If the shell closes their ok---if not they are bad. Serve with any sauce you wish. If you live on the coast everyone knows the drill and recognizes the set up.  If you have invited friends over they know its fix your own and clean up your own mess.  Neighbors know they are welcome  to drop by and partake.  All you have to do is sit around, drink beer and watch football on tv. Everyone has a great time (sort of a do it your self party). Morton, please do tell us how to do crawfish sometime.  I love crawfish too.
